BRIEF PRESENTATION
The E.L.K.E. – AUTh (Laboratory/Unit) undertakes research, educational, and demonstration programs across a broad range of Food Technology and Hygiene subjects, from the production- primary sector to the processing-secondary sector of agricultural and livestock products and foods, among other areas. In addition, it contributes to the transfer and application of modern know-how and provides technical support to farmers and processors, among others, through educational and lifelong learning activities.
ROLE IN THE IMPLEMENTATION OF THE PROJECT
The Laboratory of Technology of Industrial Food and Agricultural Industries, taking into account the main veterinary problems faced by the livestock farming enterprises of the Production Bodies participating in the project, conducts the following studies / measurements: antioxidant potential of samples, identification of specific antioxidants according to the results of the determination of natural antioxidants from the animals’ feed, product quality (texture, color, fat content, saturated and unsaturated, protein, ash, moisture, pH). It also participates in conferences and (workshops) to disseminate the results and supplies the supporting website with new data.
